Here is a fun, easy, delectable (Passover-friendly!) recipe for ya’ll from my Mom! It says to make them in a 9 x 13 pan, but I used an 8 x 8 bc after combining the first ingredients, it didn’t look like it would spread that far, so hence the smaller dish.
I baked this in an 8 x 8 glass dish at 350 degrees for 25 mins (may need 30 in the smaller dish)
You will need:
1 can of macaroons, chopped (I am partial to Manischewitz almond macaroons! mmmm)
3/4 stick unsalted butter
6 oz. chocolate chips (I used dark chocolate ones)
6 oz. coconut
1 small can sweetened condensed milk
1 cup chopped nuts (I used pecans, but walnuts, almonds, pistachios, whatever you prefer)
1 cup dried/chopped cranberries (or other dried berry) OPTIONAL – i added this (and it was quite tasty!)
DIRECTIONS
1. Melt butter and in a medium bowl, combine with chopped macaroons. Once mixed, press into bottom of baking dish
2. Layer the chocolate chips, nuts, coconut, and cranberries on top
3. Pour condensed milk over top & bake!
