It’s summertime! The lazy, hazy days are upon us and it’s not the most fun time in my non-AC’d apartment/kitchen, so I was looking for something to bake that wouldn’t take too long or have me schvittzing too much! Here is my adaptation of some delish Oatmeal Cookies. Enjoy!
YOU WILL NEED:
-2 sticks unsalted butter, softened
-1 cup dark brown sugar
-1/2 cup light brown sugar
-2 eggs
-1 teaspoon vanilla
-1 1/2 cups flour
-1 teaspoon baking soda
-1 teaspoon cinnamon
-1/2 teaspoon salt
-3 cups oats, uncooked
-1 cup plump raisins
PREP:
1. Heat oven to 350 degrees
2. In a large bowl, beat together butter & sugar til nice & creamy
3. Add eggs & vanilla, beat together well
4. In a separate medium bowl, sift together the flour, baking soda, cinnamon & salt, then add to butter/sugar mixture & mix well
5. Stir in oats & raisins, mix well
6. Drop by rounded tablespoons onto an ungreased cookie sheet
7. Bake 10-12 minutes or until golden brown
8. Cool for one minute after you remove from oven, then move to a plate or wire rack
9. Git some lemonade and try not to eat too many!
